Step-by-Step Instructions
- Preheat your oven to 325°F (163°C). Grease the springform pan lightly with butter or cooking spray.
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter until resembling wet sand. Press firmly into the pan and bake for 8–10 minutes.
- Beat softened cream cheese using an electric mixer until smooth. Add brown sugar, sour cream, and eggs, mixing until fully combined.
- Pour the cheesecake batter over the cooled crust and spread evenly. Layer the spiced apple mixture evenly over the cheesecake batter.
- Bake for 35–40 minutes until edges are set but center is slightly jiggly. Avoid overbaking.
- Leave the cheesecake in the oven with the door ajar for about an hour to cool gradually.
- Mix rolled oats, melted butter, and brown sugar for the crumble topping. Once the cheesecake is chilled, sprinkle the topping over it.
- Preheat oven to 375°F (190°C) and bake the cheesecake with the crumble for 12–15 minutes until topping is golden.
- Let rest for 10 minutes before releasing from the springform pan. Serve warm or chilled.

Notes
For best results, chill overnight to allow flavors to meld well. Use a variety of apples for unique taste profiles.
