Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C). Grease the springform pan lightly with butter or cooking spray.
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter until resembling wet sand. Press firmly into the pan and bake for 8–10 minutes.
  3. Beat softened cream cheese using an electric mixer until smooth. Add brown sugar, sour cream, and eggs, mixing until fully combined.
  4. Pour the cheesecake batter over the cooled crust and spread evenly. Layer the spiced apple mixture evenly over the cheesecake batter.
  5. Bake for 35–40 minutes until edges are set but center is slightly jiggly. Avoid overbaking.
  6. Leave the cheesecake in the oven with the door ajar for about an hour to cool gradually.
  7. Mix rolled oats, melted butter, and brown sugar for the crumble topping. Once the cheesecake is chilled, sprinkle the topping over it.
  8. Preheat oven to 375°F (190°C) and bake the cheesecake with the crumble for 12–15 minutes until topping is golden.
  9. Let rest for 10 minutes before releasing from the springform pan. Serve warm or chilled.
