- Preheat the oven to 350°F (175°C). Pound the pork tenderloin to ¾ inch thick.
- Shape the tenderloin into a rectangle, setting it aside.
- Sauté chopped onion in olive oil for 3–4 minutes. Add garlic, spinach, and cream cheese until well combined. Season the filling.
- Create a bacon weave on a flat surface with 14 strips of bacon.
- Assemble by placing the tenderloin on the bacon weave, spreading the filling, and rolling tightly in the bacon.
- Place in a baking dish and bake for 75 minutes or until the internal temperature reaches 145°F (63°C).
- Sauté chopped orange bell peppers for 4–5 minutes, then add broccoli and cherry tomatoes, seasoning as needed.
- Let the pork rest for at least 10 minutes before slicing.
