Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mash cooked green lentils until mostly smooth in a large mixing bowl. Add breadcrumbs, finely chopped onion, minced garlic, parsley, dill, oregano, cumin, olive oil, salt, pepper, and egg. Mix gently until just combined.
- Shape the mixture into meatballs around 1–1.5 inches in diameter and place them on the baking sheet.
- Bake for 20–25 minutes, turning halfway through, until golden and firm.
Tzatziki
- In a separate bowl, whisk together Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, salt, and optional dill or mint. Refrigerate for at least 20 minutes.
Serving
- Once the meatballs are baked, let them cool slightly and serve with tzatziki, garnished with lemon wedges and cucumber slices.
