Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil can be swapped for avocado oil
  • 2 tablespoons balsamic vinegar apple cider vinegar is an alternative
  • 2 cloves minced garlic fresh garlic enhances flavor
  • 1 teaspoon Italian herbs fresh herbs like basil work well
  • 1 teaspoon smoked paprika regular paprika can be used

For the Salad
  • 4 cups baby spinach arugula or spring mix are substitutes
  • 1 cup cherry tomatoes diced bell peppers can be substituted
  • 1 medium avocado toss in lemon juice to prevent browning
  • 1 cup mozzarella balls feta or goat cheese are alternatives
For the Vinaigrette
  • 1 tablespoon honey agave syrup is a vegan substitute
  • 1 teaspoon Dijon mustard yellow mustard works too
  • 3 tablespoons extra virgin olive oil

Method
 

Preparations
  1. In a medium bowl, whisk together olive oil, balsamic vinegar, minced garlic, Italian herbs, smoked paprika, salt, and pepper until well combined. Coat the chicken breasts thoroughly in the marinade, cover, and refrigerate for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). Arrange the marinated chicken on a baking sheet and bake for 20–25 minutes, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for 5–10 minutes before slicing.
  3. While the chicken bakes, combine balsamic vinegar, honey, Dijon mustard, salt, and pepper in a jar. Shake vigorously, then add olive oil while shaking until emulsified.
  4. Slice the avocado, halving the cherry tomatoes, draining mozzarella balls, and washing the baby spinach.
  5. In a bowl, layer baby spinach, sliced chicken, mozzarella, avocado, and cherry tomatoes. Drizzle with vinaigrette before serving.
  6. Sprinkle with fresh basil or parsley and drizzle with balsamic glaze if desired before serving.
