For the Tart Base
  • 1 sheet Puff Pastry thawed
  • 4 large Eggs room temperature
  • 8 oz Boursin Cheese
For the Topping
  • 4 oz Prosciutto or crispy bacon
  • 1 tbsp Everything But The Bagel Seasoning or sesame seeds
  • 2 stalks Green Onions
For the Salad
  • 4 cups Arugula or mixed greens
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice freshly squeezed
  • 1/4 cup Parmigiano Cheese shaved

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface and transfer it to the baking sheet, pressing down gently.
  3. Score a 1-inch border around the edges and prick the center with a fork.
  4. Whisk together 1 egg and 1 tablespoon of water to make an egg wash and brush it over the scored border.
  5. Sprinkle Everything But The Bagel seasoning across the crust.
  6. Bake the pastry for about 10 minutes until lightly golden.
  7. Spread a layer of Boursin cheese across the pastry base.
  8. Crack the eggs onto the cheese-covered pastry, spacing them evenly, and season with salt and pepper.
  9. Bake again for 12 to 14 minutes until the egg whites are set.
  10. While the tart is baking, toss arugula with olive oil, lemon juice, and a pinch of salt.
  11. Once the tart is done, top with tossed arugula salad and sprinkle with Parmigiano cheese.
