- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface and transfer it to the baking sheet, pressing down gently.
- Score a 1-inch border around the edges and prick the center with a fork.
- Whisk together 1 egg and 1 tablespoon of water to make an egg wash and brush it over the scored border.
- Sprinkle Everything But The Bagel seasoning across the crust.
- Bake the pastry for about 10 minutes until lightly golden.
- Spread a layer of Boursin cheese across the pastry base.
- Crack the eggs onto the cheese-covered pastry, spacing them evenly, and season with salt and pepper.
- Bake again for 12 to 14 minutes until the egg whites are set.
- While the tart is baking, toss arugula with olive oil, lemon juice, and a pinch of salt.
- Once the tart is done, top with tossed arugula salad and sprinkle with Parmigiano cheese.
