Ingredients
  

For the Salmon Bites
  • 1 lb Fresh Salmon cut into bite-sized cubes
  • 1 tsp Garlic Powder can substitute with fresh garlic
  • 1 tsp Smoked Paprika regular paprika can be used
  • 0.5 tsp Salt adjust to taste
  • 0.5 tsp Black Pepper adjust according to spice tolerance
  • 1 cup Panko Breadcrumbs for crispy coating
  • 1 tbsp Olive Oil cooking spray is a low-fat alternative
For the Bang Bang Sauce
  • 0.5 cup Mayonnaise can use Greek yogurt
  • 2 tbsp Sweet Chili Sauce
  • 1 tbsp Sriracha adjust based on spice preference
  • 1 tsp Honey optional
  • 0.5 lime Lime Juice
For the Bowl Assembly
  • 2 cups Jasmine Rice cooked
  • 1 cup Purple Cabbage shredded
  • 1 whole Avocado optional
  • 0.5 cup Carrots shredded
  • 2 whole Green Onions sliced
  • Fresh Cilantro optional garnish
  • Sesame Seeds optional garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or air fryer to 390°F (200°C).
  2. Mix salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Press seasoned salmon into panko breadcrumbs until thoroughly coated. Lightly spray with olive oil if desired.
  4. Cook in the oven for 10-12 minutes or air fry for 8-10 minutes until crispy and cooked through.
  5. Whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and optional honey to prepare the Bang Bang sauce.
  6. Assemble bowls with jasmine rice, cabbage, avocado, carrots, and top with salmon bites and Bang Bang sauce.
  7. Garnish with green onions, cilantro, and sesame seeds before serving.
