- Preheat your oven to 400°F (200°C) or set your air fryer to 390°F (200°C).
- In a large bowl, toss the fresh salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Press each seasoned salmon piece into panko breadcrumbs and arrange them on a baking sheet or in your air fryer basket, spacing them out for air circulation. Spray with olive oil.
- Cook the salmon bites in the oven for about 10–12 minutes until golden brown and crispy.
- While the salmon cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a bowl to make the Bang Bang sauce.
- Assemble the bowls starting with a base of jasmine rice, then layer on cabbage, avocado, carrots, and the crispy salmon bites. Drizzle with Bang Bang sauce and top with green onions, cilantro, and sesame seeds.
