Ingredients
  

For the Salmon Bites
  • 1 pound Fresh Salmon cut into bite-sized cubes
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • to taste teaspoon Salt & Black Pepper adjust to your taste
  • 1 cup Panko Breadcrumbs gluten-free breadcrumbs are a good alternative
  • 2 tablespoons Olive Oil can be replaced with cooking spray
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise or Greek yogurt for a healthier substitute
  • 1/4 cup Sweet Chili Sauce
  • 1 tablespoon Sriracha modify according to your spice threshold
  • 1 tablespoon Honey optional
  • 1 tablespoon Lime Juice fresh is recommended
For the Bowl Assembly
  • 2 cups Jasmine Rice or cauliflower rice for low-carb option
  • 1 cup Shredded Purple Cabbage green cabbage can work in place
  • 1 medium Avocado can be omitted or swapped for sliced cucumbers
  • 1 cup Shredded Carrots
  • 2 stalks Green Onions substitute with chives if preferred
  • to taste tablespoon Fresh Cilantro optional for garnish
  • to taste tablespoon Sesame Seeds optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) or set your air fryer to 390°F (200°C).
  2. In a large bowl, toss the fresh salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Press each seasoned salmon piece into panko breadcrumbs and arrange them on a baking sheet or in your air fryer basket, spacing them out for air circulation. Spray with olive oil.
  4. Cook the salmon bites in the oven for about 10–12 minutes until golden brown and crispy.
  5. While the salmon cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a bowl to make the Bang Bang sauce.
  6. Assemble the bowls starting with a base of jasmine rice, then layer on cabbage, avocado, carrots, and the crispy salmon bites. Drizzle with Bang Bang sauce and top with green onions, cilantro, and sesame seeds.
