For the Salmon Bites
  • 1 pound Fresh Salmon cut into bite-sized cubes
  • 1 teaspoon Garlic Powder or substitute with fresh minced garlic
  • 1 teaspoon Smoked Paprika or regular paprika
  • 0.5 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 1 cup Panko Breadcrumbs gluten-free if desired
  • 2 tablespoons Olive Oil or cooking spray
For the Bang Bang Sauce
  • 0.5 cup Mayonnaise or Greek yogurt
  • 2 tablespoons Sweet Chili Sauce adjust to taste
  • 1 tablespoon Sriracha adjust to taste
  • 1 tablespoon Honey optional
  • 1 tablespoon Lime Juice freshly squeezed
For the Bowl Assembly
  • 2 cups Jasmine Rice or cauliflower rice
  • 1 cup Shredded Purple Cabbage or green cabbage
  • 1 cup Shredded Carrots
  • 2 stalks Green Onions sliced
  • 0.25 cup Fresh Cilantro for garnish
  • 2 tablespoons Sesame Seeds for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) or set your air fryer to 390°F (200°C).
  2. Toss the salmon cubes with garlic powder, smoked paprika, salt, and black pepper in a large bowl.
  3. Press each salmon piece into panko breadcrumbs and arrange on a baking sheet or air fryer basket.
  4. Cook in the oven for 10–12 minutes or until golden brown and crispy.
  5. Whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a bowl.
  6. Assemble the bowls with jasmine rice, cabbage, avocado, carrots, salmon bites, and drizzle with Bang Bang sauce, garnished with green onions, cilantro, and sesame seeds.
