Ingredients
  

For the Short Ribs
  • 3 pounds Beef Short Ribs Bone-in short ribs may be substituted
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Braising Liquid
  • 2 tablespoons Avocado Oil Alternative oils can be used
  • 1 medium Onion Yellow onion is milder
  • 4 cloves Garlic Fresh garlic works best
  • 1 teaspoon Smoked Paprika Regular paprika can be used
  • 2 tablespoons Tomato Paste
  • 1 cup Chipotle in Adobo
  • 1 cup Adobo Sauce
  • 2 tablespoons Honey
  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon Soy Sauce
  • 1 cup Beef Broth
For the Nachos Assembly
  • 1 can Refried Beans Black beans can be used
  • 12 ounces Thick-Cut Tortilla Chips Ensure they can hold toppings
  • 2 cups Mexican Cheese Blend Any melting cheese blend can substitute
For the Toppings
  • 1 cup Cherry Tomatoes Diced regular tomatoes can substitute
  • 1/4 medium Red Onion
  • 1/4 cup Cilantro
  • 1 large Avocado Ripe avocados are best
  • 2 tablespoons Lemon Juice Swap for extra lime if preferred
  • 2 tablespoons Lime Juice
  • 1/4 cup Pickled Jalapeños Optional for heat
  • 1/4 cup Fresh Cilantro Optional for garnish

Method
 

Preparation Steps
  1. Preheat your oven to 325°F (162°C).
  2. Mince 4 cloves of garlic and chop 1 medium yellow onion. Finely chop 1-2 chipotle peppers in adobo sauce.
  3. In a mixing bowl, whisk together 2 tablespoons of tomato paste, 1 cup of adobo sauce, 2 tablespoons of honey, 1 tablespoon of apple cider vinegar, 1 tablespoon of soy sauce, and 1 cup of beef broth.
  4. Season the beef short ribs with salt and black pepper.
  5. Heat 2 tablespoons of avocado oil in a Dutch oven over medium-high heat, then sear the ribs for about 10 minutes until browned.
  6. Sauté chopped onion until softened, then add garlic and smoked paprika and cook for an additional minute.
  7. Pour the braising sauce into the pot, return the ribs, cover, and braise for about 2 hours.
  8. Warm the refried beans, dice cherry tomatoes, chop red onion, and cilantro, and mash avocado with lemon and lime juice.
  9. Shred the cooked beef ribs into bite-sized pieces.
  10. Increase oven temperature to 375°F (190°C) and assemble nachos on a baking sheet.
  11. Add fresh toppings and serve hot.
