- In a blender, combine cottage cheese, rolled oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Blend until smooth.
- Transfer the mixture to a large bowl and gently fold in the blueberries.
- Allow the batter to sit undisturbed for about 5 minutes to thicken.
- Scoop the mixture into the greased mini muffin cups, filling each about three-quarters full.
- Bake for 18 to 22 minutes, or until the tops are golden and spring back lightly when pressed.
