  • 1 pound Chicken Breast Diced
  • 2 tablespoons Olive Oil For cooking
For the Vegetables
  • 1 tablespoon Cajun Seasoning Or Creole seasoning
  • 1 medium Onion Chopped
  • 2 cups Broccoli Chopped
  • 1 medium Zucchini Sliced
  • 1 cup Bell Peppers Chopped
For Cooking
  • 1 cup Chicken Stock Vegetable broth for vegetarian option
  • 1/4 teaspoon Red Chili Pepper Flakes Optional
  • 2 tablespoons Fresh Parsley Chopped, optional for garnish

Method
 

Cooking Steps
  1. Cut the chicken breast into 1/2-inch cubes, season with salt, pepper, olive oil, and Cajun seasoning.
  2. Heat skillet over medium heat, add seasoned chicken, and sauté for 5-7 minutes until browned and cooked through.
  3. Remove cooked chicken from skillet, add chopped onion and sauté for 2 minutes until translucent.
  4. Add broccoli, zucchini, and bell peppers, season with Cajun seasoning, and cook for 3-5 minutes.
  5. Deglaze skillet with chicken stock, return chicken, and mix together, cooking for an additional 2-3 minutes.
  6. Garnish with red chili pepper flakes and parsley before serving.
