Step-by-Step Instructions
  1. Rinse quinoa under cold water for 1 minute. Combine rinsed quinoa with 2 cups of water in a saucepan. Bring to a boil, then cover and simmer for 15 minutes.
  2. In a large mixing bowl, layer with mixed greens.
  3. Fluff quinoa and spoon over mixed greens. Arrange cherry tomatoes, avocado, shredded carrots, diced cucumber, and chickpeas on top.
  4. Combine tahini, lemon juice, salt, and pepper in a small bowl. Whisk until smooth, adding water for desired consistency.
  5. Drizzle tahini sauce over the assembled bowl and serve immediately.
