  • 2 Large Eggs
  • 1/2 cup Unsalted Butter (melted) can be substituted with margarine
  • 1 teaspoon Salt
  • 2 teaspoons Baking Powder ensure it's fresh
  • 1 cup White Sugar can be swapped with brown sugar
  • 1 cup 2% Milk can be replaced with almond or oat milk
  • 3.4 ounces Jell-O Butterscotch Pudding Mix instant pudding mix required
For the Icing (optional)
  • 1 cup Powdered Sugar adjust sweetness to taste or omit

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a mixing bowl, combine white sugar, large eggs, and melted unsalted butter; whisk until smooth and creamy (about 2-3 minutes).
  3. Add 2% milk and Jell-O butterscotch pudding mix to the bowl, sprinkle with baking powder and salt, and stir gently until well combined.
  4. Fold in all-purpose flour gradually, mixing just until combined and smooth.
  5. Pour the batter into the greased loaf pan, filling it about three-quarters full.
  6. Bake for 40-50 minutes until golden brown and a toothpick inserted in the center comes out clean.
  7. Cool the loaf in the pan for at least 15 minutes before transferring to a wire rack. Optionally top with icing before serving.
