Preparation Steps
- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- In a mixing bowl, combine white sugar, large eggs, and melted unsalted butter; whisk until smooth and creamy (about 2-3 minutes).
- Add 2% milk and Jell-O butterscotch pudding mix to the bowl, sprinkle with baking powder and salt, and stir gently until well combined.
- Fold in all-purpose flour gradually, mixing just until combined and smooth.
- Pour the batter into the greased loaf pan, filling it about three-quarters full.
- Bake for 40-50 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Cool the loaf in the pan for at least 15 minutes before transferring to a wire rack. Optionally top with icing before serving.
