Step‑by‑Step Instructions for Cattle Drive Casserole
  1. In a large skillet over medium heat, brown the ground beef with chopped onion and diced red bell pepper until beef is no longer pink and onions are translucent, about 7-10 minutes.
  2. In a mixing bowl, combine biscuit mix with water, taco seasoning mix, and garlic powder. Add any remaining chopped veggies from the skillet for extra flavor.
  3. Preheat your oven to 350°F (175°C) and spray a 9 x 13” casserole dish with cooking spray. Layer the cooked beef mixture, followed by the biscuit mix, then diced green chiles, sour cream and mayonnaise mixture, lastly half of the cheddar cheese.
  4. Spread salsa evenly over the layers, sprinkle remaining cheddar cheese on top, and add crispy onions or breadcrumbs if desired.
  5. Bake for 30-35 minutes until bubbly and golden brown. Edges should be firm and center set.
  6. Allow to cool for 10 minutes before serving to help the layers set.
