  • 1 can Black Beans rinsed
  • 1 cup Sweet Corn use canned directly
  • 1 can Diced Tomatoes and Green Chiles
  • 2 cups Ready Rice cooked
  • 1-2 cups Colby Jack Cheese freshly shredded
For Serving
  • 1/4 cup Cilantro fresh, for garnish
  • 1 Avocado sliced
  • 1 cup Tortilla Chips for serving

Method
 

Step-by-Step Instructions
  1. Preheat a large oven-safe skillet over medium heat and spray with cooking oil.
  2. Add 1 pound of ground beef and 1 diced onion; cook for 8-10 minutes until browned.
  3. Stir in taco seasoning and 1 cup of salsa; simmer for 2-3 minutes.
  4. Add 1 can of rinsed black beans and 1 cup of sweet corn; incorporate 1 can of diced tomatoes and green chiles.
  5. Reduce heat and simmer for 5-6 minutes.
  6. Stir in 2 cups of cooked ready rice, then sprinkle 1-2 cups of freshly shredded Colby Jack cheese on top.
  7. Place under the broiler for 1-2 minutes until the cheese is bubbly and golden brown.
