Ingredients
  

For the Cherry Layer
  • 2 cups Cherries fresh or pitted frozen
  • 1/2 cup Sugar adjust to taste
  • 2 tablespoons Lemon Juice
  • 1/4 cup Amaretto or almond extract/cherry brandy
For the Mascarpone Filling
  • 1 cup Heavy Cream keep chilled
  • 1 cup Mascarpone Cheese high-quality recommended
  • 1/2 cup Powdered Sugar adjust to preference
  • 1 teaspoon Vanilla Extract
For Dipping and Assembly
  • 1 cup Espresso freshly brewed or strong coffee
  • 24 pieces Ladyfingers briefly soak in espresso-amaretto mixture
For Garnishing
  • 2 tablespoons Cocoa Powder for dusting
  • 2 tablespoons Shaved Chocolate dark or milk chocolate

Method
 

Preparation Steps
  1. In a medium saucepan, combine cherries, sugar, lemon juice, and Amaretto. Heat over medium for 5-7 minutes, then cool.
  2. In a large bowl, whip heavy cream until soft peaks form. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth. Gently fold whipped cream into mascarpone.
  3. Brew espresso and stir in a splash of Amaretto. Pour into a shallow dish and cool.
  4. Dip ladyfingers briefly in the espresso mixture and layer in a serving dish with mascarpone cream and cherry mixture. Repeat layers, finishing with mascarpone cream.
  5. Cover and refrigerate for at least 4 hours or overnight for best results.
  6. Dust with cocoa powder and sprinkle shaved chocolate before serving. Optionally add extra cherries on top.
