Preparation Steps
- In a medium saucepan, combine cherries, sugar, lemon juice, and Amaretto. Heat over medium for 5-7 minutes, then cool.
- In a large bowl, whip heavy cream until soft peaks form. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth. Gently fold whipped cream into mascarpone.
- Brew espresso and stir in a splash of Amaretto. Pour into a shallow dish and cool.
- Dip ladyfingers briefly in the espresso mixture and layer in a serving dish with mascarpone cream and cherry mixture. Repeat layers, finishing with mascarpone cream.
- Cover and refrigerate for at least 4 hours or overnight for best results.
- Dust with cocoa powder and sprinkle shaved chocolate before serving. Optionally add extra cherries on top.
