  • 1 can Chickpeas drained and rinsed
  • 1 Avocado diced
  • 1 cup Feta Cheese crumbled
  • 1/4 cup Red Onion thinly sliced
  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Mint chopped
For the Dressing
  • 3 tablespoons Olive Oil extra virgin
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Pepper

Method
 

Instructions
  1. Drain and rinse the chickpeas under cold water for 1–2 minutes.
  2. In a large bowl, combine chickpeas, avocado, feta, and red onion. Add parsley and mint. Gently mix.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Let rest for 5–10 minutes.
  4. Pour dressing over the salad and gently toss to coat.
  5. Serve immediately or chill for 30 minutes before serving.
