- In a saucepan over medium heat, combine 1 cup sugar and 1 cup water with all but one sprig of mint. Stir and bring to a low boil until sugar dissolves, about 10 minutes. Cool syrup for 5-10 minutes before straining.
- Fill two 16 oz. glasses generously with crushed ice.
- Pour 1 cup of Passion Fruit Juice into each glass filled with ice. Drizzle in 2-3 tablespoons of Mint Simple Syrup per glass.
- Pour 7.5 ounces of club soda into the glasses and stir gently.
- Garnish each mocktail with a fresh mint sprig and a slice of fruit if desired. Serve immediately.
