Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini paper liners.
- Combine the cottage cheese, rolled oats, applesauce or grated apple, and egg in a large mixing bowl. Add cinnamon, honey or maple syrup (if using), baking powder, and a pinch of salt. Mix until well incorporated.
- Let the mixture sit for 5 minutes to allow the oats to absorb moisture.
- Using a small cookie scoop, fill each muffin cup with the mixture.
- Bake for 18-20 minutes until set in the middle and lightly golden on top.
- Let the bites cool for about 5 minutes in the pan before transferring them to a wire rack to cool completely.
- Enjoy warm or at room temperature. Store in the fridge for up to 4 days in an airtight container.
