  • 1 cup Cottage Cheese
  • 1 cup Rolled Oats quick oats can be used
  • 1/2 cup Applesauce or Grated Apple mashed banana can be used as an alternative
  • 1 large Egg no substitutions for optimal texture
  • 1 teaspoon Cinnamon
  • 2 tablespoons Honey or Maple Syrup optional
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with mini paper liners.
  2. Combine the cottage cheese, rolled oats, applesauce or grated apple, and egg in a large mixing bowl. Add cinnamon, honey or maple syrup (if using), baking powder, and a pinch of salt. Mix until well incorporated.
  3. Let the mixture sit for 5 minutes to allow the oats to absorb moisture.
  4. Using a small cookie scoop, fill each muffin cup with the mixture.
  5. Bake for 18-20 minutes until set in the middle and lightly golden on top.
  6. Let the bites cool for about 5 minutes in the pan before transferring them to a wire rack to cool completely.
  7. Enjoy warm or at room temperature. Store in the fridge for up to 4 days in an airtight container.
