  • 2 tbsp Ground Cinnamon the star ingredient
  • 2 tbsp Butter (melted) or margarine for dairy-free
Cream Cheese Glaze
  • 4 oz Cream Cheese or dairy-free cream cheese
  • 1 cup Powdered Sugar ensure it's pure
  • 1 tsp Vanilla Extract can be omitted

Step-by-Step Instructions
  1. Prepare the cinnamon filling by mixing melted butter, brown sugar, and ground cinnamon until smooth. Transfer to a zip-top bag and let thicken for 10-15 minutes.
  2. In a large bowl, whisk together flour, baking powder, and salt. Gradually add milk, oil, and the beaten egg, stirring lightly until just combined.
  3. Melt cream cheese and butter in a microwave-safe bowl until smooth. Whisk in powdered sugar and vanilla extract until silky.
  4. Heat a non-stick skillet and pour approximately ½ cup of pancake batter. Cook for 3-4 minutes until bubbles form.
  5. Snip a corner off the zip bag with the cinnamon filling and squeeze a swirl on top while the pancake is cooking. Flip when bubbles form.
  6. Cook the other side for 1-2 minutes, then keep warm in the oven while repeating the process. Drizzle with cream cheese glaze before serving.
