  • 2 tablespoons Maple Syrup Can substitute with honey or agave syrup.
  • 1 whole Egg Can substitute with flaxseed meal mixed with water.
  • 2 large Egg Whites Can substitute with aquafaba.
Filling
  • 1 cup Greek Yogurt Any yogurt variety, including dairy-free options.
  • 2 tablespoons Granular Sweetener (Erythritol) Can substitute with stevia.
  • 1 teaspoon Ground Cinnamon
Topping
  • 1 tablespoon Granular Sweetener
  • 1 teaspoon Ground Cinnamon

Method
 

Prepare the Batter
  1. In a mixing bowl, combine 1 cup of oat flour, 2 tablespoons of maple syrup, 1 whole egg, and 2 egg whites. Whisk until smooth.
Cook the Crepes
  1. Heat a nonstick skillet over medium heat. Add a teaspoon of oil or butter. Pour 1/3 cup of the batter onto the skillet, cooking for 1-2 minutes.
  2. Flip and cook for an additional minute until golden.
Make the Filling
  1. Combine 1 cup of Greek yogurt, 2 tablespoons of granular sweetener, and 1 teaspoon of ground cinnamon in a bowl. Stir until smooth.
Assemble the Crepes
  1. Spread a layer of filling over the crepes and roll tightly. Repeat with remaining crepes.
Prepare the Topping
  1. Mix together 1 tablespoon of sweetener and 1 teaspoon of cinnamon. Sprinkle over the rolled crepes.
