Step-by-Step Instructions
  1. In a medium saucepan, combine 1 cup of filtered water, 1 cup of fresh mint leaves, and ¾ cup of organic cane sugar. Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves. Allow it to simmer for about 2-3 minutes until fragrant, then remove from heat and let it cool completely, about 10-15 minutes. Discard the mint leaves once cool.
  2. Once your mint syrup has cooled, gather your blender and add 4 cups of fresh cubed watermelon, 1 cup of chopped organic cucumber, and the juice of 1 freshly-squeezed lemon. Pour in the cooled mint syrup, blending on medium-high for about 2-3 minutes until the mixture is smooth and well-combined.
  3. For a pulp-free experience, place a fine mesh strainer over a large pitcher and carefully pour the blended mixture into it. Use a spatula to press down the pulp, extracting every last drop of juice.
  4. Pour the smooth juice into tall glasses filled with ice. If desired, chill the juice in the refrigerator for an hour or two before serving to enhance its refreshing quality.
