- In a medium saucepan, combine 1 cup of filtered water, 1 cup of fresh mint leaves, and ¾ cup of organic cane sugar. Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves. Allow it to simmer for about 2-3 minutes until fragrant, then remove from heat and let it cool completely, about 10-15 minutes. Discard the mint leaves once cool.
- Once your mint syrup has cooled, gather your blender and add 4 cups of fresh cubed watermelon, 1 cup of chopped organic cucumber, and the juice of 1 freshly-squeezed lemon. Pour in the cooled mint syrup, blending on medium-high for about 2-3 minutes until the mixture is smooth and well-combined.
- For a pulp-free experience, place a fine mesh strainer over a large pitcher and carefully pour the blended mixture into it. Use a spatula to press down the pulp, extracting every last drop of juice.
- Pour the smooth juice into tall glasses filled with ice. If desired, chill the juice in the refrigerator for an hour or two before serving to enhance its refreshing quality.
