Step-by-Step Instructions
  1. Set your Instant Pot to sauté mode. Add a drizzle of olive oil, toss in the diced onion, sliced carrots, and celery. Sauté for about 3-5 minutes until softened.
  2. Stir in the rinsed wild rice blend and optional sliced mushrooms. Cook for an additional 2 minutes, allowing flavors to meld.
  3. Pour in the chicken broth, followed by the thyme, rosemary, bay leaf, salt, and pepper. Stir well and submerge ingredients.
  4. Secure the lid on your Instant Pot, set the valve to sealing, and select the pressure cook function for 25 minutes.
  5. Release the pressure using the quick release method. Remove the chicken, shred it with two forks, and return it to the pot with optional spinach.
  6. Stir in heavy cream or coconut milk, sauté for an additional 2-3 minutes to heat through, and serve.
