For the Veggies
  • 1 cup Carrots Julienned; any root vegetable can be swapped.
  • 8 cups Escarole Chopped; can substitute with spinach.
For the Creaminess
  • 15.5 ounces Cannellini Beans Rinsed and drained; other beans can be substituted.
For Garnish
  • 1 bunch Fresh Basil Optional.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a 6-quart stockpot over medium heat. Add the chopped onion and sauté until translucent and tender, about 3-4 minutes.
  2. Stir in 3 minced garlic cloves and 1 teaspoon of coarsely ground pepper, cooking for an additional minute.
  3. Add in 12 ounces of thawed frozen Italian meatballs along with 1 cup of julienned carrots. Pour in 32 ounces of reduced-sodium chicken broth and bring to a gentle boil.
  4. Once boiling, reduce the heat to low and cover the pot. Let it simmer for 5 minutes.
  5. Add in 15-1/2 ounces of rinsed cannellini beans and 8 cups of chopped escarole. Stir to combine, then return the soup to a boil.
  6. Reduce the heat again, covering the pot and letting it simmer for about 10 minutes.
  7. Garnish your soup with optional fresh basil before serving.
