- Season the chicken breasts with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken for 6-7 minutes on each side until cooked through. Remove and let rest.
- Boil a pot of salted water and cook the pasta according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
- Melt butter in the same skillet, add garlic, and sauté for 1 minute. Stir in Cajun seasoning and smoked paprika. Pour in heavy cream and chicken broth, simmer for 4-5 minutes.
- Reduce heat and stir in Parmesan cheese until melted. Add cooked pasta and sliced chicken, tossing to coat. Adjust consistency with reserved pasta water if needed.
- Garnish with parsley and extra Parmesan, serve hot.
