Ingredients
  

For the Chicken
  • 2 pieces Boneless, skinless chicken breasts
  • 1 tablespoon Olive oil
  • 2 teaspoons Cajun seasoning adjust to taste
  • to taste Salt
  • to taste Pepper
For the Pasta
  • 8 ounces Pasta (Penne, Fettuccine, or Spaghetti) choose your favorite
For the Sauce
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic, minced
  • 1 teaspoon Smoked paprika
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 1 cup Parmesan cheese, freshly grated
For Garnish
  • to taste Fresh parsley optional

Method
 

Cooking Instructions
  1. Season the chicken breasts with salt, pepper, and Cajun seasoning. Heat olive oil in a skillet over medium-high heat and sear chicken for 6-7 minutes on each side until cooked through. Remove and let rest.
  2. Boil a pot of salted water and cook the pasta according to package instructions until al dente (8-10 minutes). Reserve 1 cup of pasta water before draining.
  3. Melt butter in the same skillet, add garlic, and sauté for 1 minute. Stir in Cajun seasoning and smoked paprika. Pour in heavy cream and chicken broth, simmer for 4-5 minutes.
  4. Reduce heat and stir in Parmesan cheese until melted. Add cooked pasta and sliced chicken, tossing to coat. Adjust consistency with reserved pasta water if needed.
  5. Garnish with parsley and extra Parmesan, serve hot.

Notes
