- In a large skillet over medium heat, add olive oil and ground beef. Cook for 5–7 minutes until browned and no longer pink. Drain excess fat.
- Add minced garlic and sauté for 1–2 minutes until fragrant, stirring to mix well with the beef.
- Stir in sun-dried tomatoes, spinach, and uncooked pasta. Pour in broth and bring to a boil.
- Lower heat and cover, simmer for 12–15 minutes until pasta is tender and sauce is creamy, stirring occasionally.
- Once pasta is al dente, stir in heavy cream and Parmesan cheese until fully combined. Adjust seasoning as desired.
