- Begin by cutting whole milk mozzarella cheese into thick, rectangular sticks, each about 3 inches long and ½ inch thick.
- Set up your breading station with three bowls in a row: the first contains all-purpose flour, the second has whisked large eggs, and the third combines panko breadcrumbs, plain breadcrumbs, and the spice mixture.
- Take each mozzarella stick and dip it first into the flour, then into the egg mixture, followed by the breadcrumb mixture. For extra crunch, repeat the egg and breadcrumb steps to double-coat each stick.
- Place the breaded mozzarella sticks in a single layer on a tray and freeze them for 20-25 minutes.
- In a deep pot, heat about 2 inches of avocado oil to 375°F. Fry the mozzarella sticks in small batches for 1-2 minutes or until golden brown.
- In a saucepan over medium heat, melt unsalted butter and stir in cayenne pepper, brown sugar, smoked paprika, garlic powder, and hot sauce. Whisk until smooth.
