- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and dry medium-sized zucchinis, then slice them into even 1/4-inch rounds.
- In a large mixing bowl, toss the zucchini rounds with olive oil, garlic powder, Italian seasoning, sea salt, black pepper, and most of the freshly grated parmesan cheese. Set aside a couple of tablespoons of parmesan for later.
- Arrange the seasoned zucchini slices on the lined baking sheet in a single layer.
- Sprinkle the reserved parmesan cheese over the top of the arranged zucchini slices.
- Place the baking sheet in the preheated oven and bake for 18-22 minutes, flipping halfway through.
- Once done, let the zucchini cool for a few minutes and garnish with freshly chopped parsley or lemon zest before serving.
