Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together rice flour, cornstarch, sugar, soy sauce, eggs, minced garlic, grated ginger, salt, and toasted sesame oil until smooth.
  2. Add chicken thighs to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 4 hours, preferably overnight.
  3. Prepare the spicy mayo by mixing mayonnaise, chili paste, water, lemon juice, garlic, and a pinch of salt until smooth.
  4. Heat oil in a skillet to 350°F. Let the marinated chicken rest at room temperature for 15 minutes, then fry in batches for 4-5 minutes until golden brown.
  5. Transfer chicken to a paper towel-lined rack to drain excess oil. Sprinkle furikake and optionally garnish with sliced scallions.
