  • 1 cup Panko Breadcrumbs do not use regular breadcrumbs
  • 1/4 cup Fresh Herbs e.g., Dill, Parsley
For the Lemon Dill Sauce
  • 1/2 cup Greek Yogurt or coconut yogurt for dairy-free
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Lemon Zest

Method
 

Step-by-Step Instructions
  1. Preheat your skillet over medium heat for about 5 minutes.
  2. In a mixing bowl, combine panko breadcrumbs, chopped fresh herbs, salt, and pepper.
  3. Pat the salmon fillets dry and season with salt and pepper.
  4. Press the herb and breadcrumb mixture onto the top of each salmon fillet.
  5. Add olive oil to the skillet and place the salmon fillets herb-side down.
  6. Flip the salmon after 4-5 minutes and cook skin-side down for an additional 3-4 minutes.
  7. Mix Greek yogurt with lemon juice and zest to prepare the sauce.
  8. Serve the salmon hot with the lemon dill sauce drizzled over the top.
