Ingredients
  

For the Tacos
  • 2 cups diced potatoes sweet potatoes can be used for a unique flavor
  • 2 tablespoons olive oil or any neutral oil
  • to taste teaspoon salt
  • to taste teaspoon pepper preferably freshly ground
For the Scrambled Eggs
  • 4 large eggs or egg alternatives for dietary restrictions
  • 1 tablespoon milk non-dairy milk works too
  • 1 tablespoon butter or olive oil as a dairy-free substitute
For the Assembly
  • 1 cup shredded cheddar cheese or Monterey Jack / pepper Jack
  • 4 pieces flour tortillas corn tortillas can be used for gluten-free
For the Toppings
  • to taste tablespoon salsa store-bought or homemade
  • to taste tablespoon fresh cilantro omit if desired

Method
 

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for 1-2 minutes until shimmering.
  2. Add 2 cups of diced potatoes and season with salt and pepper. Sauté for 10-12 minutes until golden and tender.
  3. In a bowl, whisk together 4 eggs with 1 tablespoon of milk, a pinch of salt, and a dash of pepper. Set aside.
  4. Melt 1 tablespoon of butter in a pan over medium-low heat. Pour in the egg mixture and scramble for 3-4 minutes.
  5. Warm tortillas in a dry skillet for about 30 seconds on each side until soft.
  6. Assemble tacos by spooning scrambled eggs onto a tortilla, adding crispy potatoes and cheddar cheese.
  7. Top with salsa and fresh cilantro as desired.
  8. Serve immediately while warm.
