Step-by-Step Instructions
- Begin by coarsely chopping your raw shrimp until you have visible bits, or pulse them in a food processor.
- In a large mixing bowl, combine the chopped shrimp with panko breadcrumbs, the beaten egg, green onions, garlic, ginger, soy sauce, sesame oil, salt, black pepper, cilantro, and cornstarch. Mix gently until all ingredients are evenly distributed.
- With slightly wet hands, take a portion of the mixture and form it into balls about 1 to 1.5 inches in diameter.
- In a large, deep pan, pour in vegetable oil to a depth of about 2 inches and heat over medium-high until it reaches approximately 350°F.
- Carefully add the shrimp balls to the hot oil in batches and fry for about 3-4 minutes on one side until golden-brown.
- Once fried, use a slotted spoon to remove the shrimp balls from the oil and place them on a paper towel-lined plate.

Notes
Serve hot, garnished with fresh herbs and accompanied by dipping sauces like sweet chili or ponzu. Make ahead by refrigerating shaped balls to fry later.
