Ingredients
  

For the Spinach Mixture
  • 1 cup Chopped Spinach frozen, thawed and drained
  • 8 oz Cream Cheese can substitute with cottage cheese
  • 1 cup Shredded Mozzarella full-fat for extra chewiness
  • 1/2 cup Sour Cream can use Greek yogurt
  • 1/4 cup Grated Parmesan consider nutritional yeast for vegan option
  • 1 tsp Garlic Powder adjust to taste
  • 1 tsp Onion Powder
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper fresh ground preferred
For Breading and Coating
  • 12 sticks Mozzarella String Cheese cut in half
  • 1 cup All-purpose Flour substitute gluten-free flour if desired
  • 2 large Beaten Eggs can replace with flax egg or aquafaba
  • 1 cup Breadcrumbs panko recommended for extra crunch

Method
 

Preparation Steps
  1. In a large bowl, combine chopped spinach, cream cheese, shredded mozzarella, sour cream, and grated Parmesan. Add garlic powder, onion powder, salt, and black pepper to taste. Mix until smooth.
  2. Take mozzarella string cheese sticks and cut in half. Scoop spinach mixture to wrap around each stick, sealing well.
  3. Set up a breading station with flour, beaten eggs, and panko breadcrumbs in three shallow dishes.
  4. Dip each stick in flour, then in beaten eggs, and finally coat well in breadcrumbs.
  5. Heat about an inch of vegetable oil in a skillet over medium heat until it reaches 350°F.
  6. Fry the sticks for 2-3 minutes on each side until golden brown. Drain excess oil on paper towels.
  7. Serve warm with marinara sauce or your favorite dipping sauce.
