  • 1 medium onion chopped, either red or yellow
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
For the Spices
  • 1 teaspoon cumin toasted if possible
  • 1 teaspoon coriander
  • 1 teaspoon turmeric or curry powder
  • 1 teaspoon garam masala freshly ground is best
  • to taste salt
  • to taste pepper
Optional Add-ins
  • 1 cup vegetables e.g., bell peppers, spinach added in last 30 minutes
  • 8 ounces shrimp or tofu adjust cooking time accordingly

Step-by-Step Instructions
  1. Finely chop one onion, a couple of garlic cloves, and a small piece of fresh ginger. Cut the chicken into bite-sized pieces.
  2. Place the chicken pieces in the crockpot, followed by the chopped onion, garlic, and ginger. Add in the spices and pour in the coconut milk.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Avoid lifting the lid during cooking.
  4. Check the sauce consistency towards the end; adjust seasoning with salt and pepper.
  5. Serve with basmati rice or naan bread.
