Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, flour, salt, baking soda, and brown sugar. Mix in softened butter until resembling coarse crumbs, about 5 minutes.
  3. In a medium saucepan, combine chopped rhubarb, granulated sugar, cornstarch, and water. Bring to a simmer, stirring for 5-10 minutes until rhubarb softens.
  4. Line an 8x8 inch baking dish with parchment. Press two-thirds of the crumb mixture into the bottom, pour rhubarb filling over and sprinkle remaining crumbs on top.
  5. Bake for 30-40 minutes, until golden brown. Keep an eye on the bars as they bake.
  6. Remove from the oven and let cool for 15 minutes before slicing into squares.
