  • 1 can Canned Chickpeas Drain and rinse
  • 1/2 cup Pecans Chopped
  • 1 cup Apples Diced, prefer sweet varieties like Fuji or Honeycrisp
  • 1/4 cup Tahini Can be substituted with Greek yogurt or avocado
  • 1 tablespoon Lemon Juice Adjust to taste
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
  • 4 slices Whole Grain or Gluten-Free Bread Slightly toasted

Method
 

Preparation Steps
  1. In a large mixing bowl, add your drained and rinsed canned chickpeas and mash until mostly smooth but still some chunks remain, about 2–3 minutes.
  2. Stir in the diced apples and chopped pecans until evenly mixed, approximately 1 minute.
  3. Add tahini, fresh lemon juice, salt, and pepper to the mixture, mixing well for 1–2 minutes until all ingredients are coated.
  4. Spoon a generous portion of the chickpea salad onto one slice of bread and top with another slice. Press down lightly and slice the sandwich in half.
  5. Taste the mixture, and add more lemon juice or seasoning if needed.
