  • 8 oz Rotini Pasta can substitute with any pasta shape
  • 2 cups Broccoli chopped into small pieces
  • 1 cup Bacon Pieces can use vegetarian bacon
  • 1 cup Shredded Cheddar Cheese dairy-free cheese for vegan option
  • 1 small Red Onion finely diced
  • 1 cup Dried Cranberries can swap with raisins
  • 1/2 cup Chopped Walnuts omit for nut-free option
For the Dressing
  • 1 cup Mayonnaise or Greek yogurt for lighter version
  • 2 tbsp Sugar can use honey or agave
  • 2 tbsp White Vinegar or apple cider vinegar
  • to taste Salt
  • to taste Black Pepper

Method
 

Instructions
  1. Cook the Pasta: Boil salted water, add rotini, and cook 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Prepare the Broccoli and Onion: Chop broccoli into small florets and finely dice red onion. Set aside.
  3. Make the Creamy Dressing: Combine mayonnaise, sugar, vinegar, salt, and pepper in a bowl, whisk until smooth.
  4. Combine Pasta and Dressing: Mix cooled pasta with dressing to fully coat.
  5. Add All the Goodies: Toss in broccoli, bacon, cheese, onion, cranberries, and walnuts until evenly combined.
  6. Chill and Serve: Refrigerate for at least an hour, mix again before serving.
