Chicken Cooking
- In a mixing bowl, combine boneless skinless chicken breasts with soy sauce, olive oil, curry powder, salt, and pepper. Heat a skillet over medium-high heat and add the chicken mixture. Cook for 5-7 minutes, turning occasionally until the chicken is fully cooked through and browned, then remove from heat and let it rest.
Salad Assembly
- In a large mixing bowl, toss together the coleslaw mix, shelled edamame, sliced cucumber, roasted peanuts, and chopped fresh cilantro. Once mixed, top the salad with the crispy rice and sliced cooked chicken.
Dressing Preparation
- In a separate bowl, whisk together the peanut butter, honey, toasted sesame oil, apple cider vinegar, ground ginger, and optional garlic. Mix until smooth. Taste the dressing and adjust the sweetness or acidity according to your preference.
