- In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
- Add 1 chopped onion, 1 grated carrot, 1 diced zucchini, and 1 chopped red bell pepper. Cook for 6-8 minutes until softened.
- Stir in 2 minced garlic cloves, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 teaspoon dried Italian seasoning, and 1/2 teaspoon paprika. Cook for an additional minute.
- Transfer the sautéed mixture to a bowl and cool for about 5 minutes.
- Incorporate 8 ounces of softened cream cheese, 1/4 cup mayonnaise, 1/2 cup shredded mozzarella, 1/4 cup chopped fresh parsley, and the juice of half a lemon into the vegetable mixture.
- Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
