Preparation Steps
  1. In a large mixing bowl, add olive oil, garlic powder, paprika, onion powder, salt, and black pepper. Mix well before adding the chicken.
  2. Preheat your grill or skillet over medium heat. Rub the seasoned oil mixture over the chicken pieces evenly.
  3. Cook the seasoned chicken for about 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
  4. Remove from heat, let the chicken rest for 5 minutes, then slice into thin strips.
  5. In a small bowl, mix honey and mustard, adjusting to your taste. Optionally stir in yogurt or mayo for creaminess.
  6. Warm a tortilla in a skillet for 30 seconds on each side, then lay it flat. Add sliced chicken, lettuce, tomatoes, and cucumbers.
  7. Drizzle with the honey mustard sauce, fold in the sides, and roll up tightly. Slice in half to serve.
