  • 8 oz Fresh Mozzarella Grate fresh for the best melting quality.
For the Glaze
  • 1/2 cup Ketchup Sweet base for the glaze.
  • 1 tbsp Brown Sugar Coconut sugar also works.
  • 1 tbsp Apple Cider Vinegar Enhances the sauce with tang.
  • 1 tbsp Worcestershire Sauce Adds umami.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, Italian breadcrumbs, grated Parmesan cheese, milk, eggs, finely diced yellow onion, minced garlic, fresh parsley, dried oregano, salt, and black pepper. Mix gently until just combined.
  3. Press half of the meat mixture into a 9x5 inch loaf pan, top with mozzarella, and use the remaining mixture to seal it.
  4. Combine glaze ingredients in a saucepan over medium-low heat, stirring until smooth.
  5. Pour two-thirds of the glaze over the meatloaf and bake for approximately 50 minutes.
  6. Apply the remaining glaze after 50 minutes and bake for an additional 15-20 minutes until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10-15 minutes before slicing and serving.
