- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add sliced smoked sausage and cook for 5-7 minutes until browned.
- Add chopped onion and diced green and red bell peppers. Sauté for 5-7 minutes until softened.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in diced tomatoes and tomato sauce, mixing well.
- Incorporate rinsed kidney and pinto beans, stirring to combine.
- Add uncooked long-grain white rice and stir to coat in sauce.
- Pour in chicken broth and mix everything well.
- Add chili powder, smoked paprika, cayenne pepper, and oregano. Stir and adjust seasoning with salt and black pepper.
- Return the sautéed sausage to the pot and fold it into the mixture.
- Increase heat to bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20-25 minutes.
- Check rice for doneness after 20-25 minutes, and adjust cooking time if needed.
- Once done, remove from heat and let it rest for 5-10 minutes, covered.
- Fluff the rice with a fork and serve in bowls. Top with optional hot sauce and chopped green onions.
