Ingredients
  

For the Base
  • 1 lb Smoked Sausage Substitute with turkey sausage for a lighter option.
  • 1 tbsp Olive Oil Use vegetable oil as a substitute.
  • 1 medium Onion Yellow or red onions work best.
  • 1 medium Green Bell Pepper Chopped.
  • 1 medium Red Bell Pepper Chopped.
  • 3 cloves Garlic Minced.
For the Sauce and Protein
  • 1 can Diced Tomatoes Undrained.
  • 1 cup Tomato Sauce Can use crushed tomatoes as a substitute.
  • 1 can Kidney Beans Rinsed.
  • 1 can Pinto Beans Rinsed.
For the Grains
  • 1 cup Long-Grain White Rice Can substitute with brown rice.
  • 2 cups Chicken Broth Substitute with vegetable broth for vegetarian.
For the Seasoning
  • 1 tbsp Chili Powder Adjust to taste.
  • 1 tsp Smoked Paprika Regular paprika can be used.
  • 1 pinch Cayenne Pepper Omit for less spice.
  • 1 tsp Dried Oregano Italian seasoning can substitute.
  • to taste Black Pepper Freshly ground is best.
  • to taste Salt Adjust to taste.
Optional Ingredients
  • to taste Hot Sauce For serving.
  • to taste Chopped Green Onions For garnish.

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add sliced smoked sausage and cook for 5-7 minutes until browned.
  2. Add chopped onion and diced green and red bell peppers. Sauté for 5-7 minutes until softened.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in diced tomatoes and tomato sauce, mixing well.
  5. Incorporate rinsed kidney and pinto beans, stirring to combine.
  6. Add uncooked long-grain white rice and stir to coat in sauce.
  7. Pour in chicken broth and mix everything well.
  8. Add chili powder, smoked paprika, cayenne pepper, and oregano. Stir and adjust seasoning with salt and black pepper.
  9. Return the sautéed sausage to the pot and fold it into the mixture.
  10. Increase heat to bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20-25 minutes.
  11. Check rice for doneness after 20-25 minutes, and adjust cooking time if needed.
  12. Once done, remove from heat and let it rest for 5-10 minutes, covered.
  13. Fluff the rice with a fork and serve in bowls. Top with optional hot sauce and chopped green onions.
