Ingredients
  

For the Patties
  • 1 tablespoon Olive Oil Can substitute with canola oil
  • 1 medium Onion Diced, can substitute with shallots
  • 2 cloves Garlic Minced, fresh is best
  • 2 cups Baby Spinach Can substitute with kale
  • 1 pound Ground Chicken Can substitute with ground turkey
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs if needed
  • 1/2 cup Greek Yogurt Plain yogurt or sour cream can work
  • 1/4 cup Fresh Dill Can substitute with parsley or basil
  • 2 tablespoons Lemon Juice Can substitute with vinegar
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black Pepper Adjust to taste

Method
 

Cooking Instructions
  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook for about 5 minutes until translucent.
  2. Add minced garlic and cook for an additional 30 seconds until aromatic. Remove from heat and cool slightly.
  3. In a large bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix gently.
  4. Divide mixture into 8 equal portions and shape into patties about ½ inch thick.
  5. Heat remaining olive oil in the skillet and add the patties. Cook for 5-6 minutes on each side until golden brown and cooked through.
  6. Transfer to paper towel-lined plate to drain excess oil. Serve warm, garnished with dill or yogurt if desired.
