- Heat olive oil in a skillet over medium heat. Add diced onion and cook for about 5 minutes until translucent.
- Add minced garlic and cook for an additional 30 seconds until aromatic. Remove from heat and cool slightly.
- In a large bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix gently.
- Divide mixture into 8 equal portions and shape into patties about ½ inch thick.
- Heat remaining olive oil in the skillet and add the patties. Cook for 5-6 minutes on each side until golden brown and cooked through.
- Transfer to paper towel-lined plate to drain excess oil. Serve warm, garnished with dill or yogurt if desired.
