- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine your cooked and shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, and mixed vegetables. Add the finely chopped onion, along with salt and pepper to taste. Stir until well blended.
- Carefully transfer the creamy chicken mixture into the greased casserole dish and spread it evenly.
- In a separate bowl, mix the crushed buttery crackers with the melted butter until combined. Sprinkle evenly over the top of the casserole.
- Bake uncovered for 35-40 minutes until the topping is golden brown and bubbly.
- Once baked, allow the casserole to cool slightly before serving.
