Step-by-Step Instructions
  1. Season the boneless chicken thighs with salt, pepper, and Italian seasoning if desired. Rub generously and set aside for 10 minutes.
  2. Heat avocado oil in a skillet over medium-high heat until shimmering. Add the seasoned chicken and cook for 6-7 minutes per side until golden and cooked to 165°F.
  3. Remove chicken and add chopped shallots and sliced mushrooms to the skillet. Sauté for 3-4 minutes until shallots are translucent and mushrooms are tender.
  4. Add minced garlic and fresh spinach, stirring for about 2 minutes until the spinach wilts significantly.
  5. Pour in white wine to deglaze the pan. Then add heavy cream, Parmesan cheese, thyme, and Dijon mustard. Simmer for 5 minutes until the sauce thickens.
  6. Return the chicken to the skillet and cook for another 2-3 minutes to heat through and coat in sauce.
