- Preheat the oven to 350°F (175°C) and prepare a 9X5 loaf pan by coating it with nonstick spray and lining with parchment paper.
- Mash 3 extra ripe bananas in a large mixing bowl until smooth, ensuring to use bananas with brown or black streaks.
- Mix in 1 cup of sugar, 2 room-temperature eggs, 1 teaspoon of vanilla extract, and 1/3 cup of canola oil; stir gently until well combined.
- In a separate bowl, sift together 1 ½ cups of flour, 1 teaspoon of baking soda, and ½ teaspoon of salt. Gradually fold this into the wet mixture.
- Pour the batter into the prepared loaf pan and bake for 45 to 50 minutes.
- After baking, allow the bread to cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.
