- In a small saucepan, combine 1 cup of granulated sugar with ½ cup of fresh mint leaves, gently crushing the mint to release its aroma. Add 1 cup of water and heat over medium, stirring until the sugar dissolves, about 3-5 minutes. Once clear and slightly thickened, remove from heat and allow to cool.
- In a medium bowl, combine 1½ cups of blackberries, 2 teaspoons of granulated sugar, and ¼ cup of freshly squeezed lime juice. Mash the mixture until the blackberries are broken down into a chunky paste.
- Grab a tall glass and spoon in a few tablespoons of the blackberry mixture at the bottom. Pour in ¼ cup of the cooled mint simple syrup. Top with about 2½ cups of sparkling water and stir carefully.
- Garnish with fresh blackberries, a slice of lime, and a sprig of mint. Serve over ice immediately.
