For the Pasta
  • 2 cups Rotini or shells Feel free to swap for gluten-free pasta if needed.
For the Salad
  • 1 cup Dill pickles Chopped.
  • 1/2 cup Red onion Diced.
  • 1 cup Cheddar cheese Cubed.
  • 1/4 cup Fresh dill Finely chopped.
For the Dressing
  • 1/4 cup Dill pickle juice Vital for soaking the pasta.
  • 1 cup Plain Greek yogurt Non-fat or full-fat.
  • 1/2 cup Sour cream
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • Salt and pepper Added to taste.

Method
 

Preparation
  1. Cook the pasta in a large pot of salted water for 8-10 minutes until al dente, then toss with dill pickle juice and let sit.
  2. Combine yogurt, sour cream, dill pickle juice, garlic powder, onion powder, salt, and pepper in a small bowl.
  3. Mix the cooled pasta with dill pickles, red onion, cheddar cheese, and fresh dill.
  4. Fold the dressing into the pasta mixture until evenly coated.
  5. Chill in the refrigerator for at least 1 hour before serving.
  6. Taste and adjust seasonings before serving.
