Method
 

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine ground beef or lamb with grated onion, minced garlic, yogurt, tomato paste, salt, pepper, sweet paprika, cumin, oregano, and olive oil. Mix thoroughly until sticky and well-combined.
  2. Divide the meat mixture into equal parts, place each portion between two sheets of parchment paper. Using a rolling pin, roll into a thin sheet about 1/2 inch thick.
  3. Gently lift the parchment paper and roll the meat sheet tightly into a log shape, twisting the ends to secure it. Position the log seam-side down.
  4. Preheat your oven to 400°F (200°C) and line a baking tray with aluminum foil or parchment paper.
  5. Once preheated, place the meat log on the baking tray and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  6. After baking, remove the doner kebab from the oven and let it rest for about 5 minutes before slicing thinly.
  7. Warm the pita or tortilla, then place the sliced doner kebab into the center, adding toppings like lettuce, onion, pickles, and sauces.
