  • 1 cup Granulated Sugar
  • 2 tablespoons Cornstarch or arrowroot powder
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract or almond extract
Oat Topping
  • 2 cups Old-Fashioned Rolled Oats certified gluten-free oats optional
  • 1 cup All-Purpose Flour
  • 1/2 cup Unsalted Butter melted
  • 1/2 cup Brown Sugar can substitute with granulated sugar
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large mixing bowl, combine flour, oats, brown sugar, baking soda, and salt. Mix well, then stir in melted butter until crumbly.
  3. Press about two-thirds of the oat mixture into the bottom of the prepared pan.
  4. In another bowl, toss peaches with sugar, lemon juice, cornstarch, and vanilla. Spread over the oat base.
  5. Sprinkle the remaining oat mixture on top of the peach filling.
  6. Bake in the preheated oven for 40-45 minutes until golden brown and bubbly.
  7. Cool completely on a wire rack before slicing into squares.
  8. Serve warm or at room temperature, optionally with ice cream.
